staggered - front and rear run different width of rims/tires... most cases, rwd cars are staggered, rear wider, since you need more traction at the rear.
deep dish - can be staggered (for rwd cars) or non-stagger (for awd and fwd), deep dish is just a style of rims that looks sick...
like mentioned above, if you go with staggered rims on a fwd, you're just killing the handling of the car....

Staggered, to my knowledge, is running two different wheel sizes, not just width along. I.e. stock NSX, 15" front and 16" back.
Dished wheels are the result of mostly width of the wheel but also offset affected. Less positive offset will eventually give you more dish if the wheel is not wide to begin with.
For a Civic, 99.9% (unless yours has a rwd swap) you would run 14/13; or 15/14 or 16/15 inches of wheels if you want to do staggered setup. And front would be wider and more offset than rear. Bigger and wider tire is usually mounted on the side where the car makes the power (performance wise), and for a Civic, smaller and lighter wheels in the rear will help reduce unwanted unsprung weight, and smaller tires means less air and less rubber = less weight. But it is very minuscule.
And try not to mount narrower tires on wider wheels, to give that stretched look. It may look cool and preferred by drifters to make their cars slide better, but it is not a safe practice for normal driving.
