you can't really stab with a butcher knife.
if you're gonna use kitchen knives, I would recommend a deboning knife.
If you really want to get technical it's not easy to get to the heart from the chest. The easiest way is through the left armpit. No bones in the way, totally unprotected.
and before ladies get upset, you can change "woman's" with "man's" heart. So it's not sexist.
